Veggie, or vegetarianism (from the English word "vegan"), is a diet without meat, fish or shellfish.
Some vegetarians even refuse to eat eggs, milk and dairy products.
The vegetarian diet replaces animal protein with vegetable protein.
The range of vegetable protein sources is wide: cereals (wheat, rice, corn, semolina...), legumes (lentils, dried beans, flageolets...), oilseeds (almonds, pistachios, hazelnuts, walnuts...), vegetables and tubers (potatoes, peas...), sprouts (radish shoots, watercress, arugula...) or algae (spirulina, agar-agar...).
Legumes and wholegrain cereals are making a strong comeback on our plates because they are healthy, nutritious and cheap.
